Recipe - finally

So it's been a while since I shared a recipe.  My fault, I know.  I try and post only the really "good" recipes. I came across  this  recipe via Pinterest and thought I'd give it a try - with a few alterations, of course! After I made it the first time my sister, Abigail and I said that they tasted just like a brownie - but SO much more better for you!  Here's the recipe and what I changed or didn't change. :) Ingredients 1 cup almond butter - the second time I made these, I didn't have almond butter so I used peanut instead. Definitely not as good, but still tasty.  2 eggs - I used 2 flax "eggs". For instructions, click  here. 1/4 cup maple syrup - s ince maple syrup makes me really sick, I use Xylitol. 1 tsp. vanilla extract Pinch of salt 2 tbsp. coconut flour 2 tbsp. cocoa powder - the recipe calls for 1 or 2 tablespoons. I used the later because I wanted mine more chocolate-ity but you can totally leave out the other tablespoo...

  It's that time of the year!  Time for hot cocoa, blazing fires, and snowshoes - depending on what part of the world you are from, that is. :p Time for families to get together and enjoy one another...and in my home, enjoy one another with fellowship and lots of yummy, forever old recipes that make the most delicious food! :) Hoping that each and every one of you enjoy this time of the year while it lasts, because before we know it, it'll be 2015!!  Lord, where has this year gone?  I seems that just yesterday it was January and I was trying to grasp 2014, but then again, it feels like a lifetime ago.  Maybe it's the whole "getting older" thing...I don't know, maybe. Turmeric coated almonds

I like almonds.   Like a lot. They've become one of my favorite nuts to eat (although cashews come pretty close).   A while back I toasted almonds using turmeric and they turned out delicious!  When my sister smelled them she said that they smelled like popcorn - that's a huge compliment to me because I love popcorn! Have you ever had something so amazing you just couldn't believe it?  Have you ever come across a recipe that seems like it's just too good to be true, but isn't?  Well for me, yes and yes! This recipe. Is. Amazing.  I haven't done a post about it, but I've had to change my diet again - for more health reasons - and this time I've had to cut out ALL carbohydrates.  Yes, my life-long love affair with carbs is no more - BUT, I feel much better after having to cut them out.  It was hard to do, but again, I feel  better. :-) If you want the original recipe, click  here .  Seeing as how I can't eat the honey, I changed a few things about this already amazing recipe.    Looks good, right? The BEST Banana Bread!

I know, I know.  Everyone says that their banana bread is the best in the world, but I have say that this was truly the BEST I've EVER tasted!  AND it is COMPLETELY gluten free and almost  vegan. Here is the recipe as it appears on the box (my variations are in bold . Don't worry, the only ingredients in the mix was rice flour, potato starch, tapioca starch, guar gum, and salt): Banana Bread 2/3 cups sugar - I used Xylitol  1/3 cup butter, softened - since butter is the ONLY dairy that doesn't make my stomach feel like it's being ripped open (too graphic?), I kept it in - if you wanted this recipe to be 100% vegan, then coconut oil would work just fine. 2 eggs - I used pumpkin puree  1 1/2 cups mashed very ripe banana (about 3 medium) 1/4 buttermilk - I can't seem to remember if I used rice milk or coconut water, it was one of the two 1 teaspoon gluten free vanilla - I didn't have mine on hand so I just omitted this 2 cups Betty Cr...
